These things are hard to come by from the different market managers i've spoken to.

Anyone here know where I should go to find rabbit livers?
Most places are telling me I have to buy a whole rabbit and the livers are included, but I was thinking to just find a farmer, go a more direct route.
I'd appreciate any contacts or info.
In some states (I don't know about yours) if someone is selling rabbit meat to the public it has to be slaughtered in a USDA-inspected facility. I think chicken processors sometimes do rabbits for people. So it may be a long shot but you could check the USDA chicken processors to see if they do rabbits and if they do, ask them to give your name and phone number to the people who bring them rabbits. It could be you could work a deal with them to save livers for you from customers who don't want them.
I hadn't thought of going that route.
You've given me an idea. I can also go in reverse and ask the people selling rabbits if they ever have them slaughtered and where they take them.
That way I know exactly which processors to call and will have both the farmer and the processor know about what I'm after.
