While not something that I can hunt in the States, I have heard of capercaillie only recently and have been trying to learn more about them.



I hear that they are tricky to cook and tend to be a drier stringy meat. The closest thing I can hunt for in my area are grouse but even then, I'm unsure how similar it is.

Anyone have experience with this interesting birds?
