I completely agree that timing calving and milking to pasture growth makes sense for health of the cattle and land, but how do you get customers to go along with it?

Well, one, they don't have any choice. Once they taste our milk they are loyal for life.

Second, we educate a lot about how cows are meant to calve seasonally, like all hoover mammals, and customers can understand this.

Third, we encourage customers to stock up and freeze in the fall, though few do this.

In all honesty, I thought that seasonal dairy would be a marketing train wreck, but it hasn't been. Our customers understand that food is a living product, and accept that not all foods are available in a natural way all year round. I am amazed and delighted at our customer retention.
