...have been  mature in the garden for a couple weeks.  We've been eating them,....but is it better to leave them in the ground rather than pull them all at once?  They do not store well on the countertop, but did not know if it was better to leave them in the ground in the mid-summer heat.  Thanks....

Once the onion tops have died and the bulbs are just sitting there, you don't want them to start rotting.

Are they getting water on them from any source?  Is the sun baking them and softening them in any way?

I try to get mine out of the ground and into a cool dry location as soon as the tops are dead and dried, as they tend to start to rot.  Rotten onions STINK to high heaven when you try to store them.

Thanks, Marco.  The tops are dead and dried down...so we will try to use them up soon in eating and sauce-canning.  We will try keeping a few in the root cellar for as long as we can.

You'll find me in my office. I'll probably be drinking. And reading this tiny ad.
