Steward of a small, off grid, regenerative farm in the Pacific Northwest. Recovering clear cut timber property into productive farmland with pastured flocks, gaggles, fluffles and herds, pollinator and saffron meadows, and cork oak silvopasture. And thanks to Fred for the reminder about water kefir grains. I had a batch going for a few years, but then was traveling a lot and could not maintain it. I am looking forward to starting another batch this autumn!

Has anyone here tried to make a sparkling gingerbeer (mildly alcoholic) with water kefir? Maybe this is not the right forum for that topic... if not maybe one of you who are 'in the know' can redirect me?

THANK YOU Ulla for sharing this method for preserving egg yolks - this is great to have and I have saved it so I can try it.
When you are using these salted egg yolks (sliced or grated), are you adding them as a final garnish to items being served (no further cooking)? Or also as an ingredient into food that is going to be cooked?

Ulla - what you are doing is really impressive!!! As a newbie who has never heard of salted egg yolks before, would you share what you do to preserve them, and also the ways that you use them? They looked like little gems in the picture you posted earlier!

Love this conversation - especially about the soup - and yes, those moments where food needs to happen NOW instead of in an hour after cooking!!  My kids would complaint that there was nothing to eat in the kitchen, and when I showed them full cupboard and 'fridge, they would say 'That's not FOOD - those are INGREDIENTS!'

My go to quick eats tend to be
-- a glass of water with squeeze of lemon, and a few stems of parsley and a stem of mint, tiny pinch of salt, shaken together
    (often I just need more hydration / electrolyte boost instead of food to perk back up again)
--  a spoon full of nut butter (protein, fat, fuel)  maybe with whatever fruit is on hand, goes well with banana or apple
-- a slice of cheese with whatever pickles I have recently made (protein, fermented food)

I use a white board on the end of the shelves with the list of items / qty. It is easy to update as food goes in and out. If I had to look it up or update it on an electronic device, that sure would not happen in real time. I use the totals when I am setting up a bulk purchase. It has also been really interesting to see what I THOUGHT would be consumed over a particular time frame vs what ACTUALLY got used. Opinions vs data, sometimes massive difference!

And thanks for mentioning about expiration dates. Last week, Joel Salatin and Sina McCullough were talking about the difference between EXPIRATION dates (hard and fast do not consume after this - on baby formula, some meds etc) and BEST BY or USE BEFORE dates (suggestions of quality over time, but also motivated by manufacturers agenda toward repurchase, and contributing to food waste). Bought the bundle, and yes, could take a lifetime to absorb this one and others in my 'Stuff' list. So fabulous to know that I'll shuffle off this mortal coil before I run out of great Permies topics to learn and study!

Oh wow, Lif, that is some serious weather when the wind gets going. My sister has a cattle ranch near Veguita. She has lots to say about the weather and the gophers.
I don't think I could be contemplating the hoophouse build I have here if it were in your environment!  PNW may be soggy, but the weather is relatively benign for sure! Once every few years we get a 'blow down' wind that takes out trees and power lines, but straight wind has got to be easier to adapt to than twisters...

Seems like grain bin structures might be a safe bet  (can't remember where I nabbed this picture, but it looks charming to me) - supposed to be durable in gale force winds...

PLEASE PLEASE keep us updated on your progress! I'm going to be curious about how easy (or tedious) it is to install materials above the already existing cattle panels (those are so useful for so many things, aren't they?).



Hey Lif - yes golly, cattle panels have so many uses... Not sure how many others are using them as a snow load support in hoop houses, but they do work.  Getting them hefted up into the arches and set in place with stainless steel zip ties was a 4 person task. Getting the mass loaded vinyl and rockwool in place has to be easier than that was!...
I will post more pics and another update once I have the MLV and then the rock wool layers up. I am looking forward to testing the decibel levels again once that acoustic interference is in place!
