I am butchering October 4th and still have shares available. Quarter, half and whole. $3.00/pound hanging weight, which includes everything - slaughter, cut and wrap - no nickle and diming to death.
I live 1.25 hours North of Portland. I will probably be making drop offs both North and South. Drop off dates would be mid October.
The beef is not certified organic but seriously close in my opinion. My pasture has had no herbicides or fertilizers for the 11 years we've rented it. I have used wormer or fly powder, but nothing for about 2 years, and never on animals for butcher.
Hanging weights should be approximately 250 pounds per half, and so on. If buying a half or whole you are 100% in charge of your cut order. If ordering a quarter, we have to do some coordination with the person getting the other quarter; the cut order for the whole side has to be uniform or the butcher goes insane. BTW - fabulous small family business butcher shop, from a family of butchers and organic ranchers. Been using them for nearly 10 years; I'm always very pleased, customers' likewise.
