all the way up the mountainside, forming shallow
aquaculture pools
at each level providing the ideal environment for wasabi culture, a
continuous flow of fresh cold water. Wasabi is an expensive cash crop
which is turned into a
very hot condiment paste used with a variety of Japanese dishes.
