In response to something Paul mentioned in the Sepp chapter 1 part 5 podcast: it's important to know your animal because that means you know the health of your animal. And the health of your food is determined by the health of the animal (or soil) that it comes from! You probably don't want milk from a sick animal.
There is no line between healthy and unhealthy, there is a huge grey area. Your personal health is your responsibility, the better you know yourself, the better you can take care of yourself. A farmer who knows his animals cares for them best and it makes a difference in the food they produce!
