So I recently heard about this interesting
project happening at Southern Illinois University in town. One of the cafeterias for residence halls has set up a system whereby all the food waste is dumped into s gigantic worm bin—the worlds largest as I understand.
The reason was twofold. Firstly, importantly, there is a cost attached to just dumping all that food—a cost that surprisingly adds up. Secondly, this is just the sort of thing that SIUC does. There is a very active environmental movement on the campus (at least there was one when I was a student there). SIUC sits right at the edge of a national forest, and there is strong interaction between campus and forest among many students.
The
compost being created in the bins is being used as bedding and fertilizer for flowers and plants on campus—thus offsetting/reducing entirely the need for porting soil purchased in bags.
I love the idea! Actually I am a little surprised it was not in place when I attended, but nonetheless, this is a great effort and I would love to see these systems expand to other facilities.
