I have a giant can of black olives and I want to can them into smaller jars.
Help!! As of now I only have the ability to water bathe. Can I water bathe black olives
this way and if so what is the recipe and if not what is the pressure cooking recipe?
I'm learning so any info is helpful. Thanks

Hi Rebecca,

Water bath is mostly effective for acidic foods. Are the olives in a vinegar brine?
If they are, I say go for it. If not, you may want to brine them, though this of course will change the flavour.

Failing that, I see a giant batch of frozen tapanade in your future!
