FOR SALE: Delicious small-batch cold-leached acorn flour

This flour is made from acorns foraged in the southern appalachians. Cold-leached with seven changes of water only during the colder months of the year.

Great in baked goods, tortillas, pancakes, cookies, and waffles, acorn flour gives a rich, nutty flavor and can also yield a deep rich chocolate-y brown color. Acorn flour is also an efficient thickener, and makes an excellent base for pudding with just water and heat. Acorn pudding is likely the most common traditional way of eating acorns globally.

All acorns can be made into flour and all taste slightly different. At different times, i make flour from six different species of oak, all kept separate in small batches to preserve their unique qualities.

The price reflects that this is high-labor food. in the few other places where it shows up online, it generally costs at least double my price unless mass-produced and imported from south korea or japan. purple mooseage me to order. i can take paypal, checks, or cash. will charge for shipping.

I am interested in the acorn flour... I am curious if you are sure it is safe for consumption?
I hear you used cold water to leach the tanins and gave it 7 leaches. How long was it in the water each time?
Also... did you leach them with the shell removed or the shell on?
I just want to be sure I am getting a safe product. I have been looking for some of this flour for a while now.

i am sure as one can be about it’s safety. i’m certainly more sure of that than many other foods i buy from other places since i’ve been there for the whole process for this. we even do periodic tests for aflatoxin, which is made by a fungus - and we use the european guidelines for acceptable aflatoxin amounts, which are more stringent than the u.s. guidelines.

each of the 7 leaches go for about 24 hours. the nuts are shelled and cracked into smaller pieces first to increase surface area and keep the leaching to a reasonable amount of time.

it’s available! i have a decent amount (10+ lbs) of pin oak flour right now, with a bunch of southern red oak that will be starting to leach next week, and eventually white oak (probably in february) too.
