I plan to start a new business to sell canned sauces to restaurants and local convennient shops in MA where I live.
Supposing I will be canning about 100 cans /day.... Does anyone have suggestions on the best canning machine and other equipments I need to do this? I definitely need a large grinder (not the typical kitchen blender) to grind the tomatoes etc, hopefully it won't cost me thousands of dollars...
I'd appreciate ANY and ALL suggestions and guidance including possible obstacles associated with this type of business.
If you are planning to do this from home, I suggest that you investigate state, county, and city regulations about what is needed for a commercial kitchen. Each jurisdiction has its own set of rules. Some can be quite easy to follow, while others can be cost prohibitive. Check carefully before you invest any time/money into this.
...also check your local surplus and liquidator stores -- if they are full of many small maker's pepper sauce (like many are!) you may want to make sure you have a solid customer base before diving into this..
