Inflammation is good, right? I mean, without it, we wouldn't heal properly. So how much inflammation control, via omega 3s, via antioxidants, etc. is too much?

If you are getting nose bleeds from your blood being too thin, you're overdoing the omega 3s. That's extremely rare though. Most people's diets are so out of balance with respect to the omega 6:omega 3 ratio that it is very difficult to overdo omega 3s. If you're taking supplement pills, we're talking in the order of 40 a day for months (check Robb Wolf's calculator for a basis of comparison).
