Greenhouse with industrial shelves

We are trying to build a greenhouse with materials we can get for a good deal. We have access to these 12 feet long, 7 feet high, 3 feet deep industrial metal shelves.

My husband had the idea to put these in a square, but build a place between two opposite sides for cross ventilation with doors, and to wrap the whole thing with polycarbonate sheets. So we would just have to buy big sheets of polycarbonate.

My question is, can you grow on all those shelves? I've never seen that in a greenhouse, but I've heard of growing microgreens on shelves.

I suppose if everything on the lower shelves was shade loving it might work. When people grow microgreens on shelves they generally have a light hanging from the underside of each shelf.
