While I don't have comparative experience of the flesh color=nutrient value, I have observed a difference in the skins of russets between different soils. Heavy clay soil produced harder thicker skins than looser more organic matter soil. It makes sense that the potato growing in hard packed heavy soil would be tougher skinned to do so.
