I’ve grown potatoes many times in the past, now I just always leave some on n the garden to overwinter and they come back. I’ve noticed this year that my russets are very golden fleshed. Is there a reason why potatoes might become more yellow inside? They are good, it is not a problem. Curious if it is an indication of higher nutrient levels.
While I don't have comparative experience of the flesh color=nutrient value, I have observed a difference in the skins of russets between different soils. Heavy clay soil produced harder thicker skins than looser more organic matter soil. It makes sense that the potato growing in hard packed heavy soil would be tougher skinned to do so.
