This has gotten me very interested. I now realize that I was not really making pickles at all. Good timing as well since I just finished a lacto culture for the garden.

Hi Brenda, The jar is filled with a simple Kimchi recipe, cabbage, daikon radish, garlic, ginger, hot chili pepper, sea salt and water. The gadget and lid is called an airlock system. When water is added to trap it allows ferment gas out and keeps air from getting in, helping with the fermentation process. I found this airlock instructional video on YouTube. Hope it helps.
