Using our land as an example....advice?

We have a few acres in the high desert about a half hour from a city and we wanted to start to design to get others around us and children into permaculture. We have some animals (goats, horse, chickens, pigs in the near future) and some projects (hugel beds, perennial gardens, vermiculture, guilds) but we want to design some stuff to get kids interested in permaculture. We have 2 kids of our own (4 and 1) so it would mainly be through their school and groups we would assume, so we have some years to get everything in line. Where we live everyone owns at least 3 acres so we definitely want to show how much you can get done on that amount of land so that our neighbors will try to follow suit. We're going to tour some other permaculture places around us and see what they are doing for outreach, but figured I would ask people here also what they had done or think would be a good idea. Our land is mainly flat and dry. We live at 3800 feet and have a lot of wind come through (though wind breaks are being planted).
