Building permits for cob in Central Texas

Does anyone have experience with cob building in central Texas, and more specifically, what did it take to get a building permit for cob structures?

Our current plan is to find a large tract of land within an hour or so of Austin where we can build a cob house and eventually some "weird" rental units like a tiny house on wheels, a cob or strawbale cabin, hobbit house, etc.
My concern is that all of the counties around Austin seem to require building permits these days, so I'm curious how easy people have found getting approved to build with cob.

Did you find out anything about cob building permits in Texas? Also, if you're looking for some unskilled labor I'd be willing to lend a hand for the experience.
