Economist - Rabbit Production and Trade

WITH Christians preparing to celebrate Easter, children are looking forward to the arrival of the rather more pagan Easter Bunny. But around the world, rabbits have a more prosaic, less chocolatey use. China, currently enjoying the year of the rabbit, is both the largest producer and the largest exporter of rabbit meat, according to figures from the UN's Food and Agriculture Organisation. Venezuela, the second-biggest producer, tends to keeps its rabbit at home and is not among the top-20 exporters. Germany, the biggest importer, spent over $40m on the meat in 2008. The Easter Hare (the Bunny's forebear), which first appeared in German folklore, would not be impressed.

odd, there are people around me that cant sell rabbit, seemingly, at all.
we have traded for rabbits are various times and always find the meat good - very similar to good chicken. only complaint is that it is much more bony than a chicken.
we generally crock pot them or use the meat in some sort of casserole (mmmm rabbit pot pie).

i have thought about trying to develop a market for the meat, but it would have to be a specialty meat in a specialty market, imo.
also, currently, i can handle butchering chickens/turkeys, but i cant get past killing the furry little bunny..... to bad, because rabbits are far more efficient in meat production, easier to process, breed much faster than chickens and much quieter.
