I read a study a while back (I think

It was mostly relevant to cultures that suffer widespread malnutrition with a dietary focus of white rice - leading to both malnutrition and obesity.
By cooking the rice in coconut oil and then immediately chilling it in the fridge, the carbs were drastically altered.
I personally don't do this cause I'm a waif and want all the carbs I can get, but its damn helpful for maintaining my dogs weight and cooking for certain health-nut guests
