Culinary uses for American Sycamore?

I've always enjoyed the fragrance of sycamore trees, and I know you can tap the trees like a maple. I wonder if there are any other culinary uses.

The other day I picked a young sycamore seed pod (those tight, spherical things) and forgot about it in my car. When I discovered it today, it had a noticeable, pungent odor that reminded me of Long Pepper (piper longum) a popular Ethiopian spice we use in chili and stews. I wonder if there is a way to extract that sycamore flavor.

Wish I knew some as well. I have some huge sycamores on my place but our winters don't really make sugaring feasible. I know I can use the wood for carving but otherwise ...
