I planted garlic in late winter this year.  It’s coming up nicely without blossoms yet.  I thought rather than using it in the kitchen this year, I’d replant the cloves.  Up until now I’ve only planted dried, sometimes sprouting garlic cloves in the fall.  What should I do with green garlic to use it as seed?

I always save a bit of mine to plant in the fall. I don't do anything special but I do pick the largest healthies cloves to replant to help strengthen the genetics. that is the only mistake I can see someone making. don't eat the best ones, plant them!
