You can never tell what the Lofthouse seeds will do. Just be patient.
The main point of moschatas here (Gulf Coast) is that they survive the squash vine borers, which the maximas will not.  Also, some of them are sweeter and store longer.

The spice might be years old.  
Finished on grain or pellets?  Pellets work better, but I don't know what's in them.
Make sure you have good, fast-growing graze at least when the lambs first show up.  They sometimes take a while to get used to your forage mix, and you don't want them to get skinny while figuring it out.

8A is pretty warm for trout.  Catfish would seem to be a better match.

Depends.  Watermelon, you wait until the belly spot turns from pale green to yellow.  Some cantaloupes "slip" from the vine, and some don't.  Irish potatoes, you dig when the greenery is about half yellow.  Sweet potatoes, you dig right before the first frost.  Yellow summer squash, watch it turn from pale yellow to bright yellow, then jump backwards in time a day or so.  And so on.
Maybe give them a book as a housewarming gift?
