Don't forget shrubs. Goats love shrubs, vines, brambles, etc. They are big multiflora rose enthusiasts but will also happily destroy other roses).

My friend with goats feeds used christmas trees to her herd for midwinter vitamins. BEWARE, this does require very careful review of the trees if donated to be sure no hooks have been left behind.

I have used styrofoam peanuts (recycled from shipping) instead of pebbles at the bottom of containers pots for my balcony garden to reduce weight.

Re greenhouse substitutes: consider having a hoop house which is a temporary structure only. Could call it a cold frame. Could also use a cattle panel trellis then throw heavy plastic over it for winter. Classic cold frame for a raised bed is merely a glassed/ plexiglass screendoor or windows perhaps angled toward the sun and raised sides of the raised bed if required for room to grow.

Nasturtiums! They come in mounding & climbing types, have brilliant flowers, and are very prolific. Buds, flowers and leaves are edible. The leaf is great in sandwiches and salads as a radishy flavored green.

Others have mentioned scarlet runner bean, so let me offer two other vines in the green & purple range-- hycinth beans and malabar spinach.

Okra are very showy in bloom.

Punctuate your gardens with umbellifers (dill, cumin,  anise, caraway), spiking mints (family includes basil, oregano  & many more) and composites (daisy type flowers) to feed beneficials during blooming & feast your eyes! Most of these have edible leaf, flower and often seeds.
