persimmon jam came out chalky and astringent -- why?
Hachiya persimmons tend to be astringent and chalky, even (in my experience) when they are ripe. Fuyu persimmons, which are more squat in shape and a deeper orange, are the ones you want if you want to avoid the astringency.
