persimmon jam came out chalky and astringent -- why?
Late to the party here, but I don't see how the cooking/heating process coupd be the issue. The main thing I know people to use persimmons for is a baked "pudding". It is sweet and doesn't have the tannin quality to it. 🤷♀️
