Hugel mounds

I have these large stumps that have been bulldozed to the outskirts of a clearing. I'm thinking of mounding brush on them, then horse manure, then a little bit of dirt, then cover cropping them. Then deciding what to do with them later. They'll surrounding what'll eventually be an acre or so of flatland beds.
Anything I'm missing? This'll be my first attempt a hugel.

If anyone's curious how thing s change and progress during a bunch of weekends and with little to no planning.
What started as making piles of wood. Wound it's way into a regular fence.
