I enjoyed biscuits and gravy over the years but I didn't enjoy how they made me feel.  

But last night I made them and I wanted to share because they were tasty and I felt good after eating them.  Since I'm gluten-free, I replaced the flour with a mix of buckwheat and millet.  I also really reduced the salt.  

And for the gravy, I didn't have broth and wanted a more creamy gravy this time, so I used soy milk.  Very tasty, mushroomy gravy!
