First zucchini of the season, picked too young. It needs another 4-6 inches, but I'm excited for zucchini season.

I planted a "named" variety last year. The skins were getting hard by the time the blossom fell off and at 8 inches they already had seeds developing. Why would anyone eat wood and call it zucchini? I have no idea. Seed saving for the win!

At this stage and a little larger there might as well not be a skin on them. A fingernail doesn't even notice the difference. The skins don't start to harden until they're almost double this size. Even then it's still good. We routinely harvest zucchini double this size, although beyond that the seeds are starting to develop so they aren't as soft. Have you ever seen a seed zucchini? :)

I harvested my first zucchini, but I pick them in the baby stage. Hubby dislikes squash, but he will eat them when they are ultra young. So I pick them when the flower is still on or is just falling off.
