As it is again canning season for our region, I am faced with a question I dealt with last year. Canning of fruits and vegetables often requires refined sugar in the bottle. Even tomatoes call for it. I would like to eliminate sugar and have done so in most cases. other than fermentation, is there a way to can foods without using the sugar called for.

Freezing and fermentation are the two ways I preserve food in my home. I do not can and I don't think canning is a good idea as it pretty much destroys all the nutrients in the food.
