I make a quick beer Bread mostly in a Solar Box Cooker. This fall I made it over a fire in a small cast iron pot. The recipe is simple.
3 cups flour
4 tsp sugar
1/4 tsp salt
1 large can of Guinness

I pre mix the dry ingredients in Sandwich bags and store them in the fridge or freezer. This way when I head out for the weekend I add a bag to my cooler and can always have fresh bread.

I'll preheat my Solar Box Oven and pan for 30 min or more. Pour a little beer into the pan then the whole bag of mix and fold in the beer so not to mix too much. Keep some of the beer back so you can enjoy a sip when the bread goes in the oven. Depending on the sun the bread bakes for an hour to an hour and a half.  Over the fire in a cast pot I baked the bread for 45min and the bottom was a little chared. I'll have to try and regulate the heat better next time.

The bread can be heavy if the solar oven is not hot enough for it to rise. The taste is quite nice with Guinness. I've used other stouts and porters with mixed results.

I'll have to let my husband know.  He loves making breads and we make onion, 5 grain and wheat breads in a cast iron dutch oven.  I'm sure he'll love this recipe.  Thanks James!!!
