I did some pruning on my holly tree today. I'd like to use the cuttings in my next hügelkutur, but I am wondering if anyone has any experience with the leaves not breaking down well, or the plant trying to propagate itself?

Snap! I'm wondering the same thing, Brent.
One of my hollies blew down in the winds this winter - the roots in the wet ground just weren't up to it. I've cut it right back and am in two minds whether to take out the stump too, my garden plans have evolved since ti went in.
Actually I have some bits that might be large enough to do something more...durable with. There are some good straight poles of 2-3 inches at the thick end, and 6-7 feet long.

My experience of holly leaves is they take quite a while to rot down on the ground. You notice because they are horrid and prickly. I'm not sure whether holly tends to root itself, maybe if it was kept very wet it might. I haven't noticed my other holly shrubs which are leaning over layering themselves at all.
