I’m wondering if it’s possible to build a unpressurized rocket water heater for showers. If anyone knows anything about pulling something like this off please let me know what you think.

No problems, have the storage tank at least 4 ft above the shower outlet and run 1 inch pipe with the hot water directly to the taps. I use it all the time.
Others can assist with the RMH system.

Have a look at http://permaculturenews.org/2012/11/23/rocket-stove-hot-water/.
The safest way to heat water for showers. And very efficient, I might add.

I think it may be better to create a storage tank holding enough water for 2 showers at least.
Maybe use an older gas storage tank with the central chimney
