We are surrounded by wheat fields. We get a fair amount of wheat growing on our land because of it. So I guess I'm wondering if I collected the seeds could I plant them or are the mass farm wheat seeds not good for that?

Wheat is not hybrid or GMO (well, except for those experiments that got away) so there should be no problems resowing it or grinding it for wheat.
