This year, our  #ecominded   #house_by_the_river  has truly outdone itself with a zucchini (white marrow) harvest that can only be described as a vegetable invasion 😀
At this point, zucchini has become the unofficial head of our household. Every single day, our table features at least one masterpiece from the Zucchini Universe:

* Zucchini on sticks – sliced into coins, drizzled with sunflower oil, roasted with spices, and looking way more elegant than they have any right to.

* Zucchini potato pancakes (aka "draniki") – grated into oblivion, mixed with potato, onion, flour, and egg, then fried into crispy circles of pure comfort. Basically, a zucchini in disguise.

* Zucchini casserole – grated again (because why stop now?), baked with egg, cheese, and spices. It’s like a quiche that forgot its crust and doesn’t even care.

* Zucchini boats (4 cm tall) – stuffed with a fierce mix of sautéed chicken mince and golden fried onions.

Send help. Or more sour cream. 😄
