I wanted to share a practical guide on how to successfully cultivate and maintain water kefir grains at home to make a healthy, probiotic beverage.
Water kefir is fantastic for gut health, but keeping the grains thriving requires paying attention to a few key details:
Water Quality: Always use non-chlorinated, mineral-rich water. Chlorinated tap water can weaken or kill the grains over time.
Feeding the Grains: Organic unrefined sugar (like piloncillo/panela or raw cane sugar) provides the minerals the grains need to reproduce quickly.
Fermentation Time: Keep the jar at room temperature away from direct sunlight for 24 to 48 hours depending on your ambient climate.
First vs. Second Fermentation: Once strained, you can do a second fermentation with fruit juice or dried fruits in a sealed bottle to build natural carbonation.
