Thought I would share what I do with my chestnut crop. I cook a few in the oven but the vast majority get dehydrated and then I grind them into flour and use them in place of wheat flour. For recipes that are sweet and use artificial leavening this works well. So cookies, muffins, pancakes, etc. There’s also an old italian 50/50 chestnut and wheat flour bread recipe I dug up. I had a really hard time getting it to rise so I only made it once.
