Suficiency, stapple food products from greens? Calories from non-carb non-fat plants?

The little reading of leaves of life introduced me to drying and concentrating.

I usually have a reaction when people talk about their suficient produce of the garden... for veggies.
And they still buy lots of stuff!
I consider that we cannot stop there and be satisfied. Some people produce their animal products, or some, but this not the easiest for everyone.
Growing potatoes and preparing them is easy.
Growing cereals is not so easy, not to speak of preparing them!

Worse when you think about fats!
And I am very satisfied with my low carb high fat diet.
(I am borderline about insuline, gluten intolerant, and not perfect with other carbs)

Dave, do you think that it is possible to increase our stapple intake with greens?
A lot of leaves are rich in proteins, but our "fuel" is carbon, that is to say either sugar/carbs or fats.
Are some plants / leaves rich in fat?
I mean other than avocadoes and almonds etc!

Short cut: what do you expect from greens to fill and fuel us?
