I love the Rodale people. I have a few of their old books. Starting with J.I. Rodale in 1942 with Organic Gardening and Farming magazine, several books and now the Rodale Institute they have been a force for good in food production. (maybe they'll get into permaculture some day) Just perusing the Rodale Institute site and ran across this course. It's 15 hours long, free and covers transitioning to certified organic but also works for someone starting out in organics. I haven't gone through it and it may be geared towards mono-crop organic but I imagine there's something of value in it especially if you're considering getting certified.
