I have been trialling out some changes in the way I bake recently and I'm happy to report that the family still thinks they are delicious and 'normal'. In cakes I have replaced white flour with wholemeal and yesterday changed the sunflower oil for olive oil - still made a scrumptious cake. Next is to change some of the sugar for honey. This feels good - cakes, but healthier ones Just felt the need to share.

Here is how we make chocolate ice cream or pudding replacement:
Cut in to chunks 1 & 1/2 ripe banana per person place in a container so the pieces can freeze with out being stuck together, freeze over night.
Tip: Carefully peel & remove the pith strings from your bananas or they will give a bitter flavor.
Now take 1/2 ripe avocado per person & place into food processor, add frozen banana chunks, honey or stevia, cocoa powder & cinnamon & vanilla to taste & process until smooth.
Serve immediately, you may keep left overs in the freezer but I find that they need to be re-processed in order to be creamy.
For pudding I use 1/2 ripe avocado per person & add to processor with honey or stevia & vanilla & cocoa powder. Process until smooth & chill until served.
For extra rich variation melt 1 TBS of organic unrefined coconut shortning & drizzle it in as the blades are moving.
i did that for many many years, being taught that it was important to eat the main part of your diet of whole grains, and then fruits and vegetables, and lastly meats and fats..however, when i began to develop symptoms of type 2 diabetes, i now am limiting nearly all my carbs down to next to nothing to get my blood sugar under control...all those lovely whole grain homemade breads and baked goods are now banned from my life.
It was suggested to me to watch the movie FATHEAD and I also read the book Good Calorie Bad Calorie by Gary Taubes..you might want to check those out. Here I thought i was doing the right thing for myself and my family and now i know different..wasted all those years doing the wrong things.
I'm really replacing a lot now..replacing carbs with meats and fats

Yummy non-dairy seasoned pop corn
Make organic pop corn as usual, instead of butter warm some organic first cold press olive oil, drizzle on the pop corn & mix well, sprinkle salt, fresh ground black pepper, onion, garlic & chili powders, then sprinkle with nutritional yeast & mix again. Yummy!
