I was picking up some more plaster from the plant yesterday and I passed this old log cabin that was falling down. I noticed that although it had almost no roof left and the walls were collapsing, the lime plaster inside was still in pretty good shape. I don't think latex painted drywall would still be around!

True, drywall would be long past. Lime plasters that are not exposed to wind and rain can last over 200 years. Lime plasters that are on the exterior, will need some maintenance over the years but given that is done, they too will last far longer than current "modern" materials.
