We were over by Grand Junction and this plant was next to the sidewalk in a flower garden. It almost looks like some sort of cabbage. And there was a nice tree with large spiny fruit.

The tree looks like a Horse Chestnut to me.

The flower looks like some sort of poppy - Stylomecon, maybe?
