'Farming Bamboo' by Daphne Louis has a lot of this info. Basically, for structural use, use canes at least 4 years old as it takes that long for canes to develop their maximum strength. Leaves can be fed to livestock or allow to drop off drying canes and raked up for use as mulch. I use the upper 4 to 6 foot long branched portion of the cane for pea sticks, the unbranched lower portion for bean poles, tepees, trellises for twining plants (beans), the lower branched portion for tepees for tendril climbers (cucurbits), the middle, thickly branched portion for tomato cages. For garden use, you can cut them and use them immediately, the leaves will dry up and drop off at their leisure.
