I plan to make kefir using coconut milk in order to make probiotic kefir. But I am really confused about the sugar content of coconut milk. Most of the stuff that is sold in stores states that it has 0 grams of sugar. But when you google "How much sugar in coconut milk?" it says 8 grams per cup and it that it contains fructose. Does it have sugar? And how much will be remaining after a long ferment?
I would guess that if sugar is not an ingredient that any reference to sugar would be naturally occurring and not anything to worry about. I have kefir-ed coconut milk once but it didn't turn out great, wish I knew all the tricks it sounds like an amazing beverage when done right. I know there are many different types of coconut milk.
