Are there knowledgeable people out there who let people come help them build using these methods? At this point I'm not even sure which method I am interested in or where we would build for that matter but I would like the chance to look into getting a good base of knowledge.

Usually you can find workshops available  online through searching for "Alternative building, Alternative construction, Cob, Earthship, cordwood construction", and many of the other methods.

I've never seen any of the folks teaching these methods do it for free, but that doesn't mean there isn't someone out there that would be thankful for the help of another pair of hands.

Good luck to you.    P.S. there are books available on all the different methods that might be a faster way to figure out or at least narrow down the selection process.
Your local library may have some of those books available.
