Grafting onto wild species

I want to set up a fruiting orchard for me and my chickens.

Can I graft the following:

apple onto crab apple
plum onto sloe plum (black thorn)
different types of oak tree (I have many that don't produce acorns)
roses onto wild roses
other berries onto blackberry (bramble - very wild)
anything onto beech
anything onto chestnut
anything onto willow

These are trees that I have plenty of as they have spread into all my fields.

My farm is in inland Croatia and has not been worked for about 15-20 years hence the invasion of 15 year old trees.

Apple to crabapple will work.  Not sure about others. 

Why would you want to graft anything to chestnuts other than a different type of chestnut? 

Blackberries send up new shoots every year and fruit on the yeaqr old canes.  I doubt you could graft to them.  just enjoy the Blackberries.
