I’m new to fermentation but I’m loving the stuff I’ve recently pickled. Carrots are great Kraut is good but My first batch of turnips are too bitter. Can you add sugar or wine to the already fermented turnips to cut the bitterness a bit?
Lactofermenting vegetables is the same as making wine. You get out of the batch what you put into it. So if you start with bitter fruits or vegetables, you get bitter foods.
In my experience, the bitterness of turnips is in the skin. Therefore, I peel turnips before lactofermentation.
