My topbar hive colony will be experiencing it's first winter.  i have removed six combs for honey How much fondant should I give my colony to overwinter?

How much you removed is irrelevant. What matters is how much you left them, your local climate, and how well insulated your hive is. There is not enough information for anyone to advise you at present.
