Some of my crops that were planted in the not quite complete hugel bed by the first wofati this spring ....well late may sometime an the only water they have had is rain!

The great thing about building your own counters is that you can make them the right height for you instead of some average person. Personally I like the sink higher and the stove lower because anything on top of the stove already adds height and anything in the sink is already lower. I am not sure yet what height is best for kneading... being hooked on no-knead breads just now... but from forming the loaves I would say lower for that too.

Looks good. We are out camping just now... the picnic table is our counter

Speaking of finished... How are you planning to finish the surface? Some sort of natural oil, or a polymer of some sort? (Varithane, epoxy or whatever) This is not something I have put much thought into. Granite, though seeming very "eco" takes rather a lot of energy to finish (the original cutting may not be so bad with holes drilled by hand/solar and left over winter for freeze thaw to get chunk from granite wall). Usability is very important as well. there will be spills and the odd knife cut (even with a strict cutting board policy) and maybe the odd burn mark because "the handle is too hot I have to set it down now". Leaving raw wood would handle the hot pot thing the best and not add yick to the food with knife cuts. A dense wood would handle spills ok too if they are wiped up soonish. Really, spills are the only reason for any coating I am guessing.
