Septic removal

I am in the process of switching all toilets to Humanure and using greywater.  Now how do I or do I get rid of the old septic tank and leech field?

I would think that leaving it in is both less work and would retain your land's value better. It may also be required by code in your area. Finally, it provides a fallback.

I would leave it, personally.
